Pumpkin curry coconut soup

Autumn is perfect time for a blanket and a hot soup! Today I’ve made a very tasty one. Here’s the recipe:

All you need is:

Half a pumpkin

400ml coconut milk

2 tbsp olive oil

2 small teaspoons of curry

400ml of water

Pinch of salt and pepper

Cut the pumpkin into small pieces and c9ver it with olive oil. Put it at 180° C in the oven for 15-20min ( ’till it’s soft).

Add the coconut milk, water and seasoning into a large pot. After the pumpkin is baked mash it with a fork and add it to the pot. Stir everything and let it cook for 10 min.

That’s all! My tip is to make some croutons. Cut the bread into small pieces and bake it the same pan in which you baked the pumpkin so it soaks all the olive oil!

– Jesen, kiša i hladno vrijeme su stvoreni za pripremanje supa. Ja sam danas pravio vrlo ukusnu supu od tikve. Jednostavno je!

Sve sto vam je potrebno jeste:

Polovica tikve

400ml kokosovog mlijeka

400ml vode

2 kasike maslinovog

2 male cajne kasike curry mjesavine zacina

Prstohvat soli i bibera

Priprema:

Tikvu ocistite i isjecite na manje kocke. Stavite ih u pleh za pecenje i prespite maslinovim. Pecite ih na 180° 15tak minuta. Odnosno dok ne omeksaju.

U lonac stavite kokosovo mlijeko, vodu i zacine. Na srednju temperaturu.

Kada se tikva ispekla, viljuskom napravite pire potom dodajte u lonac. Pojacajte blago temperaturu i ostavite da se krcka.

Nakon 10tak minuta je gotova! Ovisno o tome kako vise volite, mozete tikvu pasirati ili ostaviti komadice.

Moj savjet je da napravite i krotone. Iskeckajte hljeb na kockice i u istoj tepsiji u kojoj ste pekli tikvu pecite i hljeb. Samo pomjesajte sa maslinovim u tepsiji tako da hljeb upije sve! ( Pecite na 200° 5 minuta)
